Raw Oat Crumble

This raw oat crumble is so yummy and easy to make! The picture above is what I call my Raw Oat Crumble & fruit Breakfast Bowl, but you can crumble this over my Clean Banana Nut Ice-cream too and bake it in the oven like my Oven baked fruit crumble. I’m thinking of baking it into a muesli soon too.

INGREDIENTS: 
1/2 cup of gluten free oats (or regular)
1/4 cup of blanched almonds
1/4 cup pecan & walnuts
1 or 2 tbsps. of desiccated coconut
1 tsp.  cinnamon
1/8 cup unheated honey
1 tbsps. virgin coconut oil

1. Take half of your oats and your blanched almonds together and process them in a food processor till a flour consistency.

2. Add the rest of your oats to the dry mixture.

3. Process your pecans & walnuts till a chopped consistency, and together with the desiccated coconut & cinnamon, add to the oat mixture.

4. Melt your honey & coconut oil together and add to dry mixture. Using a spoon combine ingredients till a beautiful crumble forms.

The crumble you do not use is probably best kept in an air tight container in the fridge. If I’m using mine within a day or 2 I keep it in a air tight container in the pantry 🙂

Flat Wraps (Low fat quesadilla)

When everybody in your family is eating pizza at supper time this is the healthier alternative that will leave a smile on your face 🙂

INGREDIENTS:
1 Low-GI wholewheat
Baby tomatoes sliced in half (small enough for the inside of the quesadilla)
Red onion sliced thin
Grilled bacon pieces/ordinary ham
Thin banana slices
Mozzarella cheese

This recipe makes half a traditional size quesadilla. Its enough for me, otherwise use 2 Low-GI wraps and follow the rest of the instructions.

1. Fold your wrap in half and only put toppings on the one side of the wrap.

2. Apply the cheese first and then the other toppings as much as you like. Feel free to use whatever toppings you like, but this is my favourite combination.

3. Fold the wrap and grill in a pan till the quesadilla is crispy and brown.

4. Cut into 4 pieces and enjoy!

Enjoy with 1/2 avocado mashed into guacamole and tabasco sauce! Its THE best! Cheesy and low fat!

Easiest Banana Pancakes

This is the easiest and the healthiest pancake recipe ever! It works every time and its perfectly clean! It only takes 4 ingredients and a few minutes of your time!

INGREDIENTS:
2 egg whites
3/4 banana
1 tsp. vanilla essence
1/ 2 cup oat bran (or oats)

This mixture makes about 5 pancakes.
1. Place all your ingredients in a food processor and blend till a beautiful smooth pancake mixture forms.

2. Heat a non-stick pan, and oil it as desired.

3. Pour a tablespoon of mixture into the pan one at a time and cook pancakes till holes form in the pancake batter (that way you know its cooked), then flip till done. Don’t worry about them being doughy inside, they cook through quickly. Do not overcook.

4. When all the pancakes are done top with your choice of toppings. Home-made ice-cream/chopped nuts/honey/yoghurt or anything yummy you can think of that is healthy and nutritious 😀

Strawberry Delight Ice-cream

This is the perfect Ice-cream treat to leave you feeling super refreshed on a summers day by the pool! Plus, its super simple to whip up.

INGREDIENTS:
1 cup frozen strawberries (I freeze my own to get the best quality strawberries plus a lower water content than store bought ones)
1 tbsp. cashew nut butter

1. Place the strawberries and the nut butter in a food processor and blend until a smooth consistency forms. The colour of this ice-cream is so amazing!
2. Scoop onto an ice-cream cone or into a bowl and enjoy the refreshment!

If desired, garnish with a few freshly picked mint leaves and chopped or melted dark chocolate!

Banana Nut Ice-cream

This is my FAVOURITE summer breakfast. Its basically only one banana but or some reason it really keeps me going 🙂 Its my healthy version of one of my favourite Italian restaurants dessert – the ice-cream cake. Again a dessert for breakfast is always a winner in my books!!

The principle is a healthy and creamy ice-cream with crunchy chopped nuts, and any topping you like really, folded into it. Then drizzle over some organic honey and enjoy the sweet gooey breakfast boost.

Topping ideas: nuts, raw oat crumble, cinnamon, dried fruit, chopped fresh fruit, coconut, homemade healthy raw or baked chocolate brownie, raw chocolate chunks!

INGREDIENTS:
Ice-cream
1 frozen banana (peel before freezing)
1 tbsps. nut butter (almond or peanut butter is my favourite)

Toppings:
Chopped pecan nuts
Slivered almonds
Oats & cinnamon
Honey

1. Place your frozen banana and nut butter in a food processor and process until a smooth consistency forms. This will take a little while depending on the size of your food processor. The banana will first become crumbly but then suddenly a smooth yummy creamy ice-cream will form.

2. Fold in your desired toppings and scoop out into a pretty bowl.

3. Drizzle with honey and enjoy the sweet creamy yumminess!!

I’m thinking this ice-cream would go great with my Oven baked fruit crumble ;D

Anytime smoothies

All in one Detoxing Smoothie

When I’m feeling like I am in need of a detox but I still want a kick on energy and fulfilment I always opt for this smoothie. Plus, it usually makes so much I have one for lunch too 😀

INGREDIENTS:
1 banana
handful of mixed frozen berries/just freeze your own strawberries
1/2 cup of organic beetroot juice*
1 tbsp. goji berries
1/3 large cucumber
1 stick celery
1/2 cup water & add as needed
4 ice cubes
1 tbsp. almond butter* (optional)

Simply place all ingredients into a blender and blend until smooth. Add more water to get to desired thickness or amount. Sip the deliciousness and enjoy the benefits! 🙂

*For those of you who don’t like beetroot, you cant even taste it individually in the smoothie. All the flavours together make a delish smoothie, and the beetroot really helps with the yummy sweet taste.
*The reason the almond butter is optional is because I only add it when I want some extra energy or oils. Otherwise if I don’t need that then I will rather have the almond butter later on in my day with a apple as a snack.

Oven baked Fruit Crumble

What’s sooo nice about this breakfast is that it is sooo yummy it can even be used as a healthy dessert, paired with some custard or homemade ice-cream (See my Banana Nut Ice-cream). This is actually my favourite fruit dessert but I’ve made it into a breakfast option. I LOVE having healthy desserts for breakfasts!!!

INGREDIENTS:

1/2 cup of gluten free oats (or regular)
1/4 cup of blanched almonds
1/4 cup pecan & walnuts
1 or 2 tbsps. of desiccated coconut
1 tsp.  cinnamon
1/8 cup unheated honey
1 tbsps. virgin coconut oil

1/2 cup blueberries
1 banana
1 apple
1 apricot

Preheat oven to 200 celcius prepare the ramekins you plan on using. This recipe makes 4 small ramekins of fruit crumble.

1. Take half of your oats and your blanched almonds together and process them in a food processor till a flour consistency.

2. Add the rest of your oats to the dry mixture.

3. Process your pecans & walnuts till a chopped consistency, and together with the desiccated coconut & cinnamon, add to the oat mixture.

4. Melt your honey & coconut oil together and add to dry mixture. Using a spoon combine ingredients till a beautiful crumble forms.

5. Cut up your fruit & place in layers as desired, keep in mind that the layers will sink a little while it bakes.

6. Sprinkle your crumble over your fruity layers to cover the fruit. Pile on as much as you like of this yummy crumble.

7. Bake in the oven for about 20minutes until crumble is golden brown. Keep an eye on it so it doesn’t burn on the tops of the crumble.

8. Remove from oven and let cool for a while before getting stuck in. The fruit inside will be very hot so be careful.

NOW, enjoy all the energy & vitamins found inside the oats, nuts and fruit 🙂
